Onions come in yellow, red, and white. Mild-flavored Onions are
best in salads and hamburgers. Once purchased, they should be kept
in a loosely woven bag in a cool, dry, and well-ventilated spot.
To bring out a sweeter flavor, place the Onion in the refrigerator
for one hour before using. The more pungent an Onion is when raw,
the sweeter it will be when cooked. Look for dry, firm, and shiny
Onions.

Onions are fat-free, cholesterol-free, low-calorie, and a good source
of vitamin C.

Onions were grown in Ancient Egypt, eventually arriving in Rome.
Not until French Onion Soup, however, did it become popular. Chilling
an Onion before chopping it lessens its tear-producing effects.
Handling:
Ideal temperature is between 40º F to 60º F with low humidity.
Typical shelf life is up to five weeks. Moderately sensitive to
chill damage. Keep well ventilated.
